why was McCoy riding in the Portugal GP, and what kind of bike was he riding?

yes he was, he was riding/testing a Ilmor 800cc GP bike.

WHILE the major manufacturers let the press see their new 800cc bikes in testing at Motegi just days after the MotoGP round, British-based Ilmor are going one step further; they've confirmed that they're entering the Portugese GP, the penultimate round of the 2006 calendar. Australian rider and slide king Garry McCoy has entered as the wildcard.

Ilmor have recently completed another successful test, this time at Jerez, where they dialled in the 800cc machine ready for their first race at Estoril.

Visordown.com reported earlier that the favourite for the Ilmor seat was McCoy, so this entry looks set to confirm McCoy as the Ilmor rider for the 2007 season. McCoy remains optimistic about his chances at the first race, telling Visordown.com: "The bike was impressive in testing although we are still in shakedown mode.”

McCoy, a 500cc winner with Red Bull Yamaha in Portugal and Valencia in 2000, who will compete at both circuits in the last two races of the year.

Ilmor are not new to racing; they've won two F1 world championships, Ilmor developed the McLaren Mercedes engine used in the 2001 F1 car. Mario Illien believes his team could be winning the championship within three years.

They also build V10 Viper based engines for off shore power boat racing. Good god are they sick counding and fast!!! they make the same amount of power as a supercharger V8, but last longer due to less stress on the internals.
