OK I'm going to try to explain this Let's pick it up and so be patient with me. Lol. I recently bought a 2006 Honda CBR 600 RR that had been laid down and had a couple of issues. I have fixed all of them and now goodbye has the fuel gauge fanning out flashing and the Temperature gauge will go all the way up to 269゚ and be flashing and then not even 2 seconds later it'll go all the way down to say a 120゚ then it'll be backup up to 269 then back down to 180. It's just all over the board and it does it pretty fast from when I first start it. I was going to replace a thermostat but when I took it apart to take the old thermostat out I realized it wasn't even one in there and then I read that I could just run it with no thermostat and that would befine. Is that Is true? Also I flushed the coolant system put new coolant in it put the fan on a toggle switch I can run it all the time ut it still does it. Also I just took the water pump out and it looks brand new. Is it supposed to spin freely with ease or be a little hard to spin?

I have no clue how to help you. I am curious to see the solution and trust you will find it soon.

It almost seems as if the fuel and temp sensors are not ready when the dash initialised. I imagine I saw something mentioned in the user manual about the fuel gauge flashing.
Probably broken wire going to coolant-temp sensor. Wiggle it and see if temp display changes

Yep, I've had my temperature probes for work do something similar after my cat chewed on the wires. One side of the wire will short out which changes the voltage and fools the computer into thinking it's some ridiculous number.

But the fuel gauge fanning is an indicator that the fuel gauge sensor is bad or there's another short there too.

My hunch is the PIN connector on the back of the gauge cluster is loose, corroded, or has a bad pin or 2. Start there.

I don't know if its the photo setting / colors or what, but your pump looks like cheap aftermarket casting, also why the center bolts crocked?, did you try to undo it? neither these should be the problem though,,

It must be the picture or the angle bc its not crocked

That's why you must take things apart to make sure there is no corrosion on the inside between the frame and the wiring terminal. Don't assume because it looks fine from the outside that everything is fine underneath. These bikes get a lot of bi-metal corrosion in different areas. That's why Honda had to make a rare recall on the first Gen (2003-2004) due to bi-metal corrosion of the rear brake lever.
