So, I was looking around and didn't find what I was looking for. I did see people talking about IR temp guns... but nothing as far as surface temperatures. Is it worthwhile to check your surface temperature or is it irrelevant? What is a good surface temperature? Does it change between tires or is it universal?

Surface temp can be decieving. The carcass temp is much more important and can be read with a tire probe type pyrometer. Every tire brand has a different optimum operating range, but typically trackday/street riders will see carcass temps around 185-190 deg F. While a fast expert racer will get them up to as high as 220-230 deg F. Air pressures will change as well. The hotter the temp, the higher the pressure. That is why each brand is different. Some brands do not take heat well, and those brands have to run slightly higher pressures. Higher cold pressure limits the amount of heat generated.
